Age of the vines: 50 to 100 years
Harvest: manual in small crates of 35 kg
Winemaking : grape transfer by gravity, no added SO2. 13 to 16 day macerationjours with a daily pump over (remontage) and two to three gently crushings (foulage). Manual devatting and gentle pressing
Aging: 10 to 12 mois - 50% in stainless steel, 50% in Demi-Muid (oak barrel of 500 liters)
Tasting
A Fleurie of finesse and elegance. Cellaring: 10 to 15 years.
