AGE OF VINE — 50 years
HARVEST — Hand-picked in small crates of 35kg.
WINEMAKING — Grape transfer by gravity. Whole bunch, no added SO2. 16-day maceration with a daily pump over (remontage) and two gentle crushings (foulage). Manual devatting and gentle pressing.
AGING — 8-10 months in egg-shaped tank.
